Recipe for Yam Biscuits with Smoked Goose (or Country Ham)

WHERE POTATOES MEET BOTTARGA

Holiday - This is a holiday favorite

We usually serve these around Christmas. We've used country ham, bacon, smoked goose, smoked turkey and even our own cured ham. Anything salty and meaty works.

It really is better to boil, rather than microwaving or baking the potatoes.
