You can also make jerked shrimp like this.
Jerked Chicken Marinade
(Gourmet June 1991)
1 onion, chopped
2/3 cup finely chopped scallions
2 garlic cloves
1/2 tsp dried thyme, crumbled
1 1/2 tsp salt
1 1/2 tsp allspice
1/4 tsp nutmeg
1/2 tsp cinnamon
1/4 cup minced pickled jalapeno pepper, or to taste
1 tsp black pepper
6 drops Tabasco sauce
2 tbsp soy sauce
1/4 cup vegetable oil
Put it all together in the food processor and let her rip.
Cut up the chicken (or just wings or whatever) and coat with the marinade and dump them with the rest of the marinade into a plastic freezer bag for at least an hour or better, overnight.
Grill or otherwise cook the chicken.
