Wow, I forget we used to make this all the time. Of course, we don't get cod out here all that often. Fish used to be poor people's food, and the banks were full of cod.

Cod with Onions, Lemons & Spinach

Cod with Onions, Lemons & Black Olives

1.5 lbs cod (or other white fish)
6 medium onions, peeled & thinly sliced
1 lemon, thinly sliced
1/2 cup pitted dry cured black olives
5 cloves garlic, cut into big pieces
1 - 2 lbs cleaned spinach
olive oil
salt & pepper

In an oven proof pan with a cover, heat olive oil, cook onions, garlic, lemons & olives until the onions are lightly golden.

Add the spinach and the fish and let it steam for five or ten minutes, covered.

Flip everything over so that the fish is on the bottom and vegetables are on the top. Put the covered pan in a 350 degree oven for about 20 minutes, or until the fish is cooked through.
