Shrimp, Peas and Chervil

There is nothing like the flavors of chervil, garlic and butter to bring out the flavor of shrimp and peas. This dish is best with peas from the pod.

  1. Heat the butter and olive oil in a frying pan. Cook the peas slowly over low to moderate heat, about five minutes, until they turn bright green.
  2. Add the shrimp, garlic, chervil and a bit of salt. Cook over moderate to high moderate heat, tossing with a tablespoon and fork, until the shrimp are opaque and cooked through, about five minutes.
